Flavorful Chicken Souvlaki Pita Recipe in Just 20 Minutes

Serves 4


2 ½ lb. boneless skinless chicken breast, cut into 1 inch pieces

½ cup store-bought souvlaki marinade (or use the recipe below)


For serving

4 whole pita bread

8 oz. container tzatziki

½ cup feta cheese

Chopped tomatoes

Chopped cucumber

Sliced red onion

Fresh herbs (parsley, dill or mint), optional


DIY Souvlaki Marinade

¼ cup extra virgin olive oil

1 tbsp dried oregano

5 garlic cloves, grated

1 tsp kosher salt

½ tsp black pepper

Zest & juice of 1 lemon

Active Prep Time: 20 minutes

Inactive Prep Time: 1 hr +

Total Time: 1 hr 30 minutes



 


Let’s Get Started


Step 1:

In a medium bowl combine the cubed chicken with the marinade, ensuring all the chicken is coated. Cover the bowl and refrigerate for at least 1 hour or up to overnight. When ready to cook, thread onto skewers while you heat the grill to medium-high. When the grill is hot, cook the skewers for 8-10 minutes, turning regularly until cooked through.


Oven method: Preheat the oven to 400F. Line a baking tray with parchment or aluminum foil. Spread the chicken pieces on the tray and cook for 15 minutes or until cooked through.


Step 2:

Prepare the pitas by adding a couple of spoonfuls of tzatziki, add chicken, feta, tomatoes, cucumber, red onion, and fresh herbs, if using

Helpful Tips.

  • If using wooden skewers, be sure to soak them completely in water for at least 30 minutes before cooking so that they do not burn.
